Regarding the poolside bar. I believe you can rent it until 11pm. So if you have the early sitting for dinner (ie 6:45) you can rent the poolside bar for 2-3 hours.

I see you are in Caledon! Along with some of the suggestions Julie made, I will add these: Square One (Barketti's is where I got my dress + try some other stores on the upper level), Sherway Gardens has some nice dress stores, or some of the boutique places around Caledon. The Ascot Room in Belfountain ($$$), Studio 49 in Georgetown (by appointment only and tell her what you want), Simply Gorgeous (used to be in Inglewood but is now in Bolton), L & J in Brampton ($$), or any of the other bridal stores (Bea Shawn in Brampton). Let me know if you need phone numbers for any of these!
