My parents used to make me drink milk as a kid but as I grew up my Dad became a health nazi, always up to date on the latest nutrition info. In HS he told me the story about how we are the only mammal that drinks another mammal's milk. When I would tell other ppl this they would argue that cats do too. BUT, we give it to them!!! The hormones in milk today are horrible. My neice matured way early and had boobs by the age of 9 and the doctors said it was due to the hormones in milk. She's 13 now and looks like she's 17. It's really getting crazy. I have actually heard some bad things about soy lately, which surprised me. I'll have to dig up that info... I know my BFF was really bummed when she found that out cause she's lactose intolerant and drinks soy milk every day.
  2. Wow, I never knew exactly how much work goes into all this behind the scenes. Just wanted to say THANK YOU THANK YOU THANK YOU to Tammy & all the great Mods!

Any recommendations?? I don't think that we can get the time off before hand to go and check out LC so I guess we are going in blindly! Kind of scary but fun at the same time. The ladies on here have put my mind at ease so I am not worried! We just stayed at the Westin and really enjoyed it there.

However, since they don't specialize in these types of things I am a little hesitant to do so. I'd much rather have a coordinator help me out. I wrote Amanda and she said try Kristin @ Dazzling Details so I will try that...

We told her that we may be doing the ceremony @ LC but that we definitely wanted to do the WD with her and she didn't say no. She said she'd send me $ figures by email, but I never got them. Also, I don't think she knows that we are for sure going with LC because *WE* just decided this. If that is the case, I'm very disappointed in her reaction. Zero communication - very unprofessional in my opinion. From our perspective she has just been MIA... I'm going to try and contact Amanda to see who she used. I REALLY hope we can get someone to work with us because I am in LOVE with Terra Noble...
  7. Welcome to the forum! I also live in Dallas. You're going to love it here

I had coordinators approach me after an online inquiry for PV restaurants, and they were going to charge me to to what we did ourselves in the end. You wouldn't need to hire an outside coordinator to set up something amazing here: (I know I always push this place but the food/views/price is right) Barcelona Tapas - Puerto Vallarta Restaurant - Barcelona Tapas [email protected] Actually, yes I know EXACTLY where I want my WD - it's an Art & Healing Spa up in the mountains called "Terra Noble". The thing is most of the locals we spoke with had never heard of this place. The WC that was showing us around had her civil ceremony there so she knows all about it. If we don't here from her soon I will try contacting that girl who had her wedding there (can't remember her name right now but I know someone posted the info for me somewhere)...
  9. That is soooo awesome Catherine!!!! WOOHOOO!!!!

  11. I got an email from Nicole today and it looks like we are on!!! Thankfully they are going to let us pay our deposit in June and she just said if anyone else shows interest in that date they'll let us know and go from there. Sounds like we're a GO though!!!! P.S. I find it a little odd/disturbing that our "other" WC has not contacted us ONCE since we met up with her. I've sent her at least 2 emails since then and NADA. We wanted to use her to organize our WD but I'm not sure that's going to happen now... This just shows how exemplary the staff at LC is and why we have decided to have our ceremony there. I can't even count the number of emails I've received from both Nicole & Kelley since our site visit.

  16. ... to Kelley & Nicole @ Las Caletas requesting our wedding date!!!!!! I absolutely adore them and can't imagine having my wedding in PV without those two girls. I'll let y'all know once I hear the official word.

Add garlic and saute until lightly brown and aromatic. Keep heat on low and slowly add in heavy cream, whisk to blend. Slowly heat butter/cream/garlic mixture, stirring. Slowly add grated cheese and continue to whisk until melted. Add salt and pepper to taste. Mix pasta and sauce, adding basil as garnish. ENJOY!!! I keep my thickness/consistency relatively light/soupy, since it will thicken over time. But let me tell you, this recipe is simple ad DIVINE!!! We made this tonight! Well... actually I had some hw to catch up on so Martin made it. Let's just say he didn't read the directions (LOL) and put in about 1/4 cup of cheese instead of 1 cup+. And he didn't measure out the garlic. The sauce looked great but when I went to taste it.... not so much. Poor Martin, he tried! Gotta give him credit for that! Luckily we were able to fix it up by adding milk, lots of salt & pepper and some extra parmesan cheese. We'll have to try this one again (with the directions!)

Any input? BTW, You guys have given so much good information but I'm guessing I'll still be asking questions in many many months to come! -Heather Kelley said they put so many candles around the island that you can see it from PV! I think it's romantic

  21. Oh, not sure if I mentioned it in my LC Review but yes the deck was under construction while we were there! The guys area was also still in the process of being painted... It was difficult for me to be able to tell the difference since I hadn't paid much attention to previous pics but yes I think they are making it bigger! I hope they put the big palapa back on.
