  1. Mmmmm Paula those sound so good! This recipe is yummy and easy to make. You use a skillet for like 6 minutes then it sits in the crock pot. I'm bad with measurements and would have to make it again to measure, but you can't really mess it up: chuck roast or other beef you would use for pot roast 6-8 7 oz. cans El Pato Tomato Sauce (or 2 of the big cans) 1-2 onions cut into rings potatoes, peeled and cut into big pieces 1-2 bottles of beer like corona/modelo Season the meat well (salt/pepper/garlic powder) and sear in skillet in olive oil for about 3 minutes each side so that a crust forms on the meat. Transfer to crock pot and cover with El Pato sauce, onions, and beer. Add potatoes about an hour before it is finished. Let cook for 2-3 hours or until meat is really tender. Variations: You can use 1/2 El Pato and 1/2 regular tomato sauce if it's too spicy You can also add carrots when you add the potatoes. I leave the meat whole, but you can also use chunks (like for stew).
  2. When we flew into Montego Bay we got off the plane, went inside and were given forms to fill out saying what we have, where we've been, etc. Then we got in line with our passports & the forms, someone looked it over and let us go. I still had leftover gifts/OOT bag stuff because we came from the wedding in Mexico but there were no problems and if they looked through our bags it wasn't in front of us. The only people I saw get detained were people who had recently traveled to the Dominican Republic, Haiti, etc. because of the health risks. On the way back I had a problem with a British agent at the airport but it had nothing to do with my luggage, he wanted to know about me....if it weren't for my hubby calming me down I wouldn't have made it on the plane!
  3. You can totally still do them later. It would make a cool anniversary/bday gift or just a "hey your wife is hot" out of the blue surprise! Oh, and Tammy you'll totally be able to do them. Plus you can always lay naked on your tummy until the bulge goes away...lol

  6. I've never done it myself because of the bad firsthand stories I've heard and the elevated levels of crime throughout various parts of Baja, particularly right now. But, I also know people who drive up and down Baja to surf and whatnot without incident so I guess it's up to luck. Does your sister and her family speak Spanish? That would be a major plus. If they don't want to fly or drive themselves, they can cross the border into Calexico or Tijuana and take a Mexican bus line (sort of like greyhound) down to Cabo. (although I do know someone who was on a tour bus that was pulled over and robbed along with the driver, nobody who cooperated was hurt though...and this was like 5 years ago). Anyways, I would strongly suggest flying because driving can easily take like 13 hours without stopping, but if it's not an option just make sure they do their research and be very cautious on the road. It's guilty until proven innocent there, so even if someone hits their car (for example) they may all end up at jail until it is sorted out. Check this out if they decide to drive: Cabo San Lucas,Mexico: Cabo Expo - Driving to Cabo Cabo Driving
