Our situation is a little different since we are getting married during a cruise - not really possible to arrive late or leave early. Our son will be 16 months at the time and I think he will stay with us the majority of the trip (8 nights) with the exception of the wedding night. That may change though since both sets of grandparents will be with us and have offered repeatedly to have him stay in their cabin. The cruise ship provides a pack n play so I think we'll just move it from room to room as needed. Does your resort have any kids' programs during the day that they could attend?

Hmm...from your sample menu I think you might be eating too few calories. Maybe add in a few more at breakfast and lunch. I know when I cut back too drastically I tend to get so hungry I cave and WAY overeat. My fav website is Sparkpeople. It will set up sample weekly menu plans and I believe they have a vegetarian option. If you enter your current weight and goal weight it will calculate a healthy amount of calories per day.

Yuck - what a crappy situation! Is there anyone who could maybe work a "double" for you...especially if you offered to pay them a little money for the inconvenience? Or you could offer to work all day Sunday in exchange. Perhaps tell your manager that this day is very important to you and maybe they could run a person short. I know I would hate to miss my brother's birthday!
