I am looking for non-floral centerpieces, specifically candle centerpieces. I do not know if this is realistic since the reception is outdoors, but I would love to see what you all did! I'm not adverse to flowers, I just would like to explore other options first.

Hi TauruSmith, check out this site, they have some ideas on non-floral centerpieces.  I for one still cant decide on my centerpieces. Flowers in Jamaica are so expensive, I just can't see myself spending too much $$ on something that we're only going to use for a couple of hours.

A large flat dish with water and rocks, that you could colour to match your theme, with floating candles and maybe a few fresh flower petals. Saw this at a friends wedding

What about taller vases, bought inexpensively at destination, filled with sand (probably free at beach) and store bought shells pushed down the sides?

I've heard from several outdoor brides that candles just won't stay lit when it gets windy.  But you could try battery-powered candles (they have some very realistic looking ones now) in hurricane candle holders, or maybe some lanterns, or decorated paper bags (aka lumineres).  I've also seen wine bottles with the bottom cut out used.  Here are some photos for inspiration:
