I need a dinner idea

What about a Macaroni casserole or something?

 

My recipie is easy, just some ground beef, onion, green pepper, tomato sauce and macaroni. Season it with a little bit of worcestershire sauce and salt.

 

Or a tuna casserole. Hmmm. I think I know what I'm having for dinner tonight!

My favorite thing to make and eat at home is "white chicken chili". YUM, it's delish! Here's the recipe, it seems like alot, but it really is pretty easy, oh and it's great to make a whole bunch, cuz it's better the next day. I might have to make some myself now that I am thinking about it....

 

WHITE CHICKEN CHILI

 

Prep: 20 min; Cook: 1 hr 10 min

Makes 6 servings, about 1 ½ cup each

 

¼ cup margarine or butter

1 large onion, chopped (1 cup)

1 clove garlic, finely chopped

4 cups ½ cubes cooked chicken or turkey

3 cups chicken broth

2 tablespoons chopped fresh cilantro

1 tablespoon dried basil leaves

2 teaspoons ground red chilies or chili powder

¼ teaspoon ground cloves

2 cans (15 to 16 ounces each) great northern beans, undrained

1 medium tomato, chopped (3/4 cup)

Blue or yellow corn tortilla chips

 

1.Melt margarine in Dutch oven over medium heat. Cook onion and garlic in margarine, stirring occasionally, until onion is tender.

2.Stir in remaining ingredients except tomato and tortilla chips. Heat to boiling; reduce heat to low. Cover and simmer 1 hour, stirring occasionally.

3.Serve with tomato and tortilla chips.

 

1 serving: Calories 500 (calories from fat 160g); fat 18g (saturated 4g); cholesterol 80 g; sodium 1020 mg; carbohydrate 49g (Dietary fiber 9g); protein 45

 

NOTE: I go heavy on the cilantro (an entire bunch), beans (2 large cans and usually 1 small) and chicken (I usually bake the chicken with salt and pepper, shred it after cooking and then put in the chili – I hate touching raw chicken); skipped the tomato. I also don't use a dutch oven, but just melt the butter and brown the onions in the bottom of my large soup pot.

I love fish so this is good if you do too:

 

Need:

Baking dish

Pot for boiling water

Choice of pasta/noodles

3-4 Tilapia fillets

1 can of Cheddar Cheese Soup

Half can of milk

1 diced onion

1 cut green pepper

Salt and Pepper

Half tablespoon garlic

Basil

 

Directions:

Smooth out Cheddar Cheese Soup and half can of milk with whisk. Add onion, peppers, garlic, salt/pepper and basil, blend well.

Pure mixture in cooking dish and add fillets. Put in over at 350 for 30-40 minutes. Bring water to a boil and cook pasta. Drain.

When mixture is done, serve on top of the pasta ;o)

Im making Oven Baked Chicken with a low fat marinade.

It is so good.

 

You will need:

 

8 6-8oz. boneless skinless chicken breasts

2 cups plain bread crumbs

1-2 tbsp. vegetable oil

3 tbsp. hot pepper sauce

1 tbsp worcestershire sauce

1 tsp. fesh ground pepper

1 tsp. salt

 

In a large bowl, whish together hot sauce, worcestershire sause, peper and salt.

Add the chicken and marinate for 2 to 12 hours( the longer the more intense the flavor will be).

 

Preheat oven to 425 degrees.

Remove chicken from marinade, add bread crumbs to the marinade and mix well.

Coat chicaken well with mixture.

 

Spread oil over the bottom of a baking dish.

Arrange chicken and bake 15 to to minutes.

Turn chicken over; reduce heat to 325 degrees and cook for an additional 15 to 20 minutes or until juices run clear when pierced with a fork.

 

Serving size: 5oz

Cal: 300

Fat Total: 12g

Saturated Fat: 2g

Carbs: 20g

Fiber: 1g

Protein: 26g

Not exactly low carb, but great comfort food.. we had a baked potato with broccoli, cheese, and chicken on it last night. (Actually we made/split 2 potatoes and had it for the last two nights. The chicken was leftover from 3 nights ago (grilled) and the potato and broccoli were made in the microwave. Super easy and tasted great!

 

edit: just realized you don't have any potatoes! lol
