Let me give you a little history about the day -- Cinco de Mayo is commonly confused by Americans as Mexican Independence Day. That date is actually Sept. 16. Cinco de Mayo is to celebrate the victory of the Mexican Army over the French at the Battle of Puebla.

See - what Maura said! Thanks for the history and for doing your part to educate us all!

I'm definitely up for margaritas! I think I saw a skinny margarita recipe on here. For dinner I might make lettuce wrapped fajitas.

(I'm 6 weeks from the wedding, so no more carbs for me!)

Maybe I can go shake it with some slasa dancing as my cardio for the day!

I tried to convice our office to get a margarita machine for the day. I even said we could just make them "virgin." They didn't bite.

          The Skinny Girl's Margarita

2 oz of clear Tequila (100% agave, Patron Silver)

(count 1, 2 while you pour, no need for measuring)
A splash of fresh lime juice

A splash of Cointreau, Grand Marnier or Triple Sec
Combine all ingredients over a glass of ice

Garnish with a lime wedge and salt (or sugar) if you'd like.

          Makes one serving

          ENJOY!!!
