I'm definately doing assigned seating.  We're doing one long table and I want to make sure our wedding party gets to sit around us.   Plus, we have people coming who don't get along so I don't want to take any chances of an awkward moment if seating gets taken up and these guest have to sit near each other.  That would be too much tension.

So, what I did was create tags for the favors and made sure each tag had a person's name on it.  So my favors also work as my name tags for the seating arrangement.

I'm still torn whether or not to have assigned seating, but if I do I plan on using the favors as well. I have different favors for the girls and guys so I think it will be easier getting them out that way. I am dreading the seating arrangement

So... doing a card for each guest (couples together) with their 'plate' number, wouldn't be tacky? I'm not sure of the set up yet, but having read the reviews on here, it looks like it will be long tables.  I was thinking of putting numbers on the the plates, and then the couple/person can just sit where they are supposed to sit :)
