Hi I just got marriee there and I wrote a thread answering all these questions. I think I covered all your questions plus a few more things I wish I had know in preparation before my catholic wedding.  I hope it helps new brides to be planning a catholic wedding. The paper works is a pain but its is OHHHHHHHHHHHHH so worth it!

Definitely ask, if you can, about the actual ceremony.

If they will be playing any music throughout the mass, and what readings will be made.

How many "sponsors" we need (for lasso, coins, and rings) and if we are to provide the lasso and coins ourselves.

      How long the ceremony lasts.

Are we able to have a rehearsal with the priest the day before, are their charges for the rehearsal, and (like you already said) rehearsal dinner options

Take pics of the chapel please!!!!

I'm getting married next November, can you let me know what the weather is like, and sunset time?

I'm still debating between staying at the Royal or Gran Caribe, so any insight on they're like would help!

I'm doing my reception on the beach, so if you see any while you're there if you could take some pics! :)

How much extra is the buffet option?

Thank so much, hopefully you get this in time! Have a great trip and I hope you to hear from you soon!
