It sounds like you have a lot of stuff decided but I just wanted to through in that if you like wine tasting about 1.5 hours north of LA in Santa Ynez there's a lot of gorgeous vineyards with fun wine tastings. Here are some of my favorites which I would recommend if you feel like taking a drive up:

We've pretty much settled on San Diego, LA & Las Vegas in order to keep it simple. If it gets to be too much, I might push to drop Vegas so we can experience more in and around LA & San Diego.
I suggest Las Brisas in Laguna Beach, great ocean views and yummy Mexican food.

Thanks everyone for your ideas & tips.

I checked out Fabiolus & it looks great! I'm going to try to convince my husband to go to Wicked then we'll make reservations for dinner there before. He's not that into broadway shows but he's getting tickets to a Dodger's/Mets game and going to 1 possibly 2 shows to see one of his favourite bands play so I think I have some bargaining power......

OMG I love Fabiolus!!! Their gnocchi quattro formaggi is divine! You must eat there if you'll be in the area. They have a cute patio that feels a world away from Sunset...one of my fave L.A. restaurants.

You'll love Dodger stadium too. It's surrounded by mountains and palm trees...gorgeous and very L.A.

Where is the band playing?

Blind Melon is playing in San Juan Capistrano on the 3rd of May- I've already bought tickets for my husband's birthday present. They're also playing in San Diego on the 4th so I might surprise him with tickets to see that show too as we already plan on being in San Diego for that day. He's pretty excited as he thought he would never be able to see them live.
