Dinner at Paradise Cove starts at about 7pm, however there are a bunch of activities to do before the luau such as lei making and hula lessons, boat rides, tattoos ect. I believe the doors open at 5pm with a mai tai greeting. Then people walk the grounds for a couple hours and do all the activity booths before dinner. So if you were planning a sunset ceremony you will miss allot of the activities at the Luau. However if you do the ceremony earlier the sun will be very bright and harsh and is not very great lighting for pictures. Just some food for thought while you are in the planning stages.
