I am so sorry it took me this long to respond..I actually got my account frozen for posting a review of my hair and make-up vendor in the wrong spot (which meant I couldn't send any messages)!! Grrr. Anyway, I hope it's not too late. I think that in your case, the cupcakes would be fine. Because both my son and I are gluten sensitive, it was worth it to me to get the whole cake (I had been dieting and I knew that I would eat my fair share My cake was vanilla with white frosting and chocolate cream on one inside layer. I originally wanted the "look" of fondant, but Raquel doesn't use fondant and I ended up happy that she doesn't. I loved the taste of the frosting and I really don't like the taste of fondant much. Our reception was outdoors at night and unfortunately I don't have a good photo of the cake yet (it will be awhile before we have our professional photos...sigh...). Anyway, good luck!
