Best Resort for the Money

Hi all!  

 

I'm new to this site and really excited that there are so many ideas, suggestions, and threads here that I hope will help me.  I'm newly engaged and finally starting to look into locations for our destination wedding.  I'm a US citizen marrying a UK citizen, so it's making things a bit more difficult.  

 

He will be moving to the US after the wedding, but we have that lovely little hiccup of having to get married outside the US and then file all of the paperwork to get his green card, etc going.  

 

I've always wanted a beach wedding, so looks like Caribbean, here we come!  We are hoping to get married in Dec 2013 and I'm looking for advice on a nice resort on an non-US territory island that processes their wedding certificates immediately.  I know this sounds odd, but my friend got married in Costa Rica and it took her over 2 months to get their wedding certificate back and we need it ASAP to start all of the fun paperwork.

 

I've been looking for an all-inclusive resort and really love the look of the Cocobay Resort in Antigua, but am open to any other suggestions.  I know it's probably the most expensive time of the year due to Christmas and New Year's, but we're also trying to keep it affordable for both sets of parents if at all possible.

 

Any suggestions or tips would be greatly appreciated!!!
