Newly engaged Looking in Cancun for June 2013

Hello my name is Melissa Reyes and my fiance Edwin proposed to me on July 7 and ever since then I have been working hard looking for a location for my wedding. We have finally narrowed it down to Cancun and to the last two weeks of June. So any help and suggestions will be appreciated. We went last May to Cozumel with 20 of our closes friends and family to celebrate my Dads 60Th Birthday and it was then my fiance and I decided that if we ever got married we would do a destination wedding since we had the most amazing time ever in Cozumel. When we got home he started planning and searching for the ring to propose to me, as I have been told. We have just started planning our destination wedding but already have encounter two challenges. First, we are so grateful to a friend who has allowed us to use his timeshares for 25 of our guest and ourselves at the the Park Royal Cancun. We stayed at there other location in Cozumel and it was so great. So we just can't beat price that his timeshare provides but the problem is they have no wedding service so we need to find a location that does not require our guest to stay their to use their wedding service. The second problem is that I would like a Catholic wedding but I have been told that in Cancun and in all of Mexico does not allow you to get married by the Church without the Confirmation sacrament which my fiance does not have and would take a year in a half to 2 years to get. However, in my parish back home my priest tells me this is only in Mexico that we can get married by the church here back home with no problem. I have not been able to find any church to give us our marriage sacrament in Cancun without the confirmation sacrament. So any help and suggest I would truly appreciate.

I have been doing lots of research on various wedding venues all around Mexico, my fiance wants a destination wedding and I am happy to have a wedding wherever so long as the vibe is right and guests are happy!  I have been seriously looking at Cabo Azul and was trying to find potential costs for them, but only found a page about their wedding costs from 2010.
