Congrats on the upcoming wedding! I am getting married at the Renaissance later this year and had the same problem you had receiving a response quickly. I ended up giving them a call and they sent me a proposal to fill out. Once you fill out to the proposal and put down a deposit you can secure a date. They tend to take a while to respond to emails, so don't worry if you haven't heard anything yet they will eventually respond. But if you are in hurry, I would try giving them a call.
