Marriage License HELP!!!!!

I am soooooo super confused and flipping out here!! Ok, so we are getting married in Rosarito, Mexico. I do not go through all the legal crap of getting a marriage license in Mexico but I also do not want to be legally married until AFTER the ceremony. Ok, this is what I had in mind. I want one of our family members to be the officiant but I don't even know how to do that??!! Then, have them officiate the ceremony in Mexico. The resort is about 20 mins from CA so we were thinking of going to CA the next day with our officiant (since I'm assuming they will still be certified) and marrying us "legally" at the place we first met! Is this possible??? I know the ceremony in Mexico will be somewhat "fake" because nothing will actually be signed but I'm just wondering if this can be done and HOW to do it. Most people get married legally before and then do their destination wedding so I dunno if it can be done the other way around. I know absolutely NOTHING about obtaining a marriage license or how the hell this works!!! I read on LA county's court website that the license is good for 90 days? So does that mean I can get it on Thurs and then after our wedding on Sat, drive back to CA on Sun and have the officiant do it, sign it and THEN we turn it in and THEN it's legal??? AHHHHHH!!!! Sorry, I'm really stupid when it comes to this stuff...
