Collard Greens

OMG -- I know a lot of people don't like or don't know about collard greens ... but I am cooking some right now to eat at dinner later and I can hardly stop going back to the pot to sneak a taste. They are ssoo good.

 

I got the recipe from an episode of Paula Dean on FoodTV, and it ROCKS!

 

3 smoked ham hocks

5 bundles collard greens (I used more) stalks removed & torn in small pieces

1 cup sugar (I know it sounds bad)

1/2 cup salt (that REALLY sounds bad)

(I added) 1 chopped onion

(I added) 1/2 cup apple cider vinegar

 

Boil LARGE pot of salted water

Add ham hocks.

Cover and simmer for 30 minutes.

Remove hocks and discard.

Add remaining ingredients.

Cover and simmer for 2 1/2 to 3 hours.

 

OMG, I LOVE them!!!

I have heard so much about these collard greens.. they're very popular down here. Never heard of them before in Canada though. I'll have to test em out. Did you grow them Tammi on your own or buy them at the local grocery store?

I love greens, but never cook them... do they really need all that salt and sugar? Sounds bizarre, but like I said, I never cook them so I don't know what a normal recipe calls for... Paula Deen is rarely wrong though :) I'm cooking her apple stuffed pork loin right now!

That does seem like a load of sugar, but as you say, Paula knows her stuff. I've seen her use an entire stick of butter on some grilled sandwich! LOL

 

Melissa do you have a Trader Joe's there? They sell greens prewashed and cut...they have a collard/mustard/turnip green mix that is soooo good!

 

I think in Florida you should be able to buy collards at any grocery store.
