Here are some snack recipes. I haven't tried these so I can't testify to their taste - but they are worth a shot. I'm going to post them in separate posts so I don't get logged out.

 

Hummus:

1 (15 oz) can chickpeas, rinsed and drained

1/2 c plain fat-free yogurt

2 tbsp lemon juice

3 garlic cloves, crushed

2 tsp olive oil

1 tbsp water

1/2 tsp salt

1/2 tsp ground cumin

1/8 tsp pepper

 

Blend all in food processor.

Serving: 1/4 cup.

Points per serving: 2 points

Cheese straws

 

1 c all-purpose flour

1/2 tsp coursely ground black pepper

1/8 tsp cayenne

5 tbsp cold butter - cut into pieces

1 c shredded extra sharp cheddar cheese

1/4 c shredded parmesean cheese

3-4 tbsp cold water

 

1. Preheat over to 375 F. Combine flour, pepper, cayenne in food processor. Add butter and pulse until mixture forms crumbs. Add cheddar and parmesean and water. Pulse until mix forms a ball.

 

2. Turn dough on lightly floured surface and roll into 9 inch square about 1/4 inch thick. Cut into 3 x 1/2 inch strips. Makes 48.

 

3. Place on ungreased nonstick baking sheet. Bake about 15 minutes. Transfer to wire rack to cool.

 

Serving: 2 straws

Points: 2 per serving

Are you sure that's 1/4 of a cup for 5 pointshuh.gif So 20 points for a cup? That seems really high??

That's what I though too - but all the soups in the book have a 1/4 cup serving size. I put the calories into the point counter on Janet's WW excel spreadsheet and it said 3.6 points for the 1/4 cup. Still high, but not as bad as what the book said. But I have to say this is really hearty stuff - I probably couldn't eat a whole cup.

Thanks for posting this-cheese straws are one of my fav things!
