Finally found the recipe I wanted to add. My family makes this for almost every holiday. It's great served with ham but also great by itself. Some even eat it cold with whipped topping.

 

Pineapple Stuffing

Ingredients

1 stick of butter, softened

1 cup of sugar

4 eggs

1 can of crushed pineapple (20oz)

5 slices of bread, cut into cubes

 

Directions

1. Preheat oven to 350 degrees. Grease a 9 inch casserole dish.

2. In mixing bowl, cream butter and sugar together. Beat in eggs, then add pineapple and bread cubes.

3. Bake at 350 degrees for 1 hour. Bake covered for first 1/2 hr and uncovered for second 1/2 hr. It should be a golden brown on top.

I know that this is an old thread but given the time of year I think its time to revive it!!

 

I'm a huge fan of baking and this Christmas I have decided that I'm going to make some different baked goods to give to our families and friends. I'm no Martha but I try.

 

Anyway, here is one that I tried out last night and I think this is going to be the winner (for the mini loafs).

 

EGGNOG QUICK BREAD

 

1) Preheat over to 350 degrees and grease 1 loaf pan

 

2) Beat together 2 eggs in a large mixing bowl

 

3) Add the following ingredients and blend well

- 1/2 cup white sugar

- 1/2 cup brown sugar

- 1 cup egg nog (not light)

- 1/2 cup melted margarine

- 2 teaspoons rum extract

- 1 teaspoon vanilla extrat

 

4) Add the following to mixture and stir until moist

- 2 1/4 cup flour

- 2 teaspoons baking powder

- 1/4 teaspoon nutmeg

 

5) Pour better into greased loaf pan.

 

6) In a small prep bowl mix together 2 tablespoons white sugar and 1/4 teaspoon nutmeg. Spinkle on top of mixture

 

7) Bake loaf for 45-50 min or until toothpick comes out clean.

 

cool.gif Let sit for 10 min on a cooling rack before trying to cut.

 

9) The best part...EAT and ENJOY!!

mmm yummy!

 

This is a super easy cider but sooooooo good.

 

In a pan combine 2 cups apple juice and 2 cups cranberry juice as well as 2 cinnamon sticks. Simmer until hot.

 

My friend just made this for a party and I was shocked when she told me thats all that was in it. It was so good!

wow this all look so good... here are a few i love to make that are pretty simple.

baked crab wontons

 

1 box dry vegetable soup mix (I use Knorr brand)

1 (15 ounce) container ricotta cheese

8 ounces crabmeat, imitation crabmeat or 2 cans drained and flaked

1/4 teaspoon garlic powder

1/8 teaspoon ground black pepper

Worcestershire sauce to taste

Hot pepper sauce to taste

40 wonton wrappers

1 tablespoon vegetable oil or non-stick cooking spray

 

Directions

Spray a rimmed baking sheet with non-stick cooking spray.

In bowl, combine soup mix, ricotta, crab, garlic powder and pepper. Mix well.

(I chill this for about an hour at this point to let the soup mix rehydrate)

Place 1 tablespoon ricotta mixture in center of each wonton.

Brush edges with water.

Fold each corner to center and press firmly to seal.

Arrange, seam side down, on baking sheet.

Brush with oil or spray with non-stick cooking spray.

Bake at 350 degrees for 25 minutes, turning once, or until crisp and golden brown.

Serve with duck sauce or hot mustard if desired.

 

here is another favorite

 

shrimp mold (dip)

 

Shrimp mold

 

1 can of tomato soup

1 block of cream cheese

½ a tsp of salt

1 cup of mayo

finely chopped onion and celery

1 can of baby shrimp

1 package of knox gelatine

 

cream the soup and cream cheese together until melted, dissolve the gelatine in cold water (on package), added to the soup mix. Stir in celery and onions and mayo. Refrigerate until solid.

these are my favorite cookies that my grandmother use to make now i make them every year but i have to hide them from my FI or they will be gone before we have people over!!!

 

SnowBalls

 

2 ½ cup flour

¼ tsp salt

2 tsp vanilla

1 cup margerine (creamed)

¾ cup poudered sugar

 

-cream margerine and sugar together, cream well

-blend 2 tsp vanilla , add flour and salt

 

cook for 375 12 mins roll in sugar when hot.

 

 

 

 

 

Chocolate Zuchinni Cake

 

½ cup soft margarine

½ cup Crisco oil

1 tsp vanilla

½ cup sour milk ( 1 tbsp vinegar or real lemon juice) let it sit until it gets thick

2 eggs

2 ½ cup flour

1 ¾ cup sugar

4 tbsp cocoa

½ tsp baking powder

1 tsp baking soda

½ tsp cinnamon ( optional)

½ tsp cloves ( optional)

2 cups grated zuchinni

 

-in pan sprinkle chocolate chips, bake @ 350 for 40-50 minutes

Festive Feta Spread

 

Prep 15 min cook none serve 16

 

1 (6 ¼-ounce) jar roasted red peppers, drained

2 (8-ounce) packages fat free cream cheese

1 cup of crumbled reduced-fat feta cheese

1 large garlic clove, chopped

¼ teaspoon black pepper

3 tablespoon chopped fresh dill

¼ cup fresh dill sprigs

 

 

1.Set aside a 1 ½-inch piece of roasted red pepper. Pulse the remaining peppers, the cream cheese, feta, garlic and black pepper into a food processor until smooth. Add chopped dill, pulse until blended.

2.cover in fridge at least for an hour.

3.when ready to serve add the dill sprig on top and cut up the roasted pepper on top as well.
