They look awesome. Don't worry it will all look right. I remember doing the same thing and feeling like it was missing something and it was.. it was missing everything else that will be on your tables in Mexico (Ie. Glasses silverware etc). Once you have those things it will all look fine. Have you considered not having everything so symmetrical? Especially if you have votives of different sizes. I also did an uneven number of votives. I asked my WC to put my votives around my vases in a less symmetrical way. I had the table number on my table too though so I'm not sure if you were adding anything else.

@ashhtayy I think your table settings are looking great, but I also like @perianjay's idea to try something a little less symmetrical. And also try odd numbers - arrangements tend to look best when uneven. Maybe grouping them a little more closely together, as well.
I know you are working with what you have, and that won't be an exact match to the images below, but I thought these might give you some ideas.
Grouped closer to the center arrangement and uneven number of candles around it:

@ashhtayy Your centrepieces look beautiful! I agree with @perianjay and @vancouverpetunia that having everything not so symmetrical will look great too, with the whole 'naked cake" and rustic trends happening right now, imperfections make it look so perfect somehow.

@vancouverpetunia Most of those pictures have the wooden round piece that I want SO badly...but I can't travel with wood, right? lol Now you've made me want more mason jars!! How am I going to travel with all this glass? lol
@deecol You ladies are all right. It's too symmetrical and I need to mix it up a bit. Different height variations and more votives. Back to the drawing board

Good idea! Also put some plates out and glasses too if you can because those will really fill up the table as well.
I used two vases myself (to Erin's point) and I used 4 different style & height mercury glass votives on each table. I even mixed in silver (haha.. mixed metallic was a big step for me). It turned out really nice though.
Hard to tell from this pic, but I had two different style vases. One was a mason jar, clear with ivory roses and lambs ear and the other was a smaller vase with a 'hob nob' style antique texture to it. I had babies breath and tiny pink roses in that one (which I bought from Michaels and brought with me).
