We fainlly booked Now Sapphire for the same reason....more people included. Stayed there last summer for 4 nights and it was beautiful! Their wedding package seems to include a lot more than most other resorts.
I stayed at Now Sapphire two summers ago. It was beautiful :) you won't be disappointed

But can they buy separate, air and hotel? That is how I have it arranged with my TA since prices for airfare are not out yet and buying a package would require ME making a non refundable 10% deposit for all flights I put on hold. NOT HAPPENING! 
Well, all packages come with flight. It is generally more expensive when we break apart the flight and hotel. In addition, there are not too many airlines that fly direct (only Sunwing, AirTransat and Westjet). AND each carrier only fly certain days. Yah I have to put a big deposit down too..but it's refundable so it's more or less OK.

Brides Dress, Shoes & Veil- $1,650

Grooms New Suit- $500

Weddings Bands Total-$1,307

engagement photo shoot - $200

Guest Book (frame that can be signed) -$33

Flowers/Centerpieces -$300

Favors Wine Stoppers/Welcome "Survival Kits"-$150

Extra Guests-$260

Wedding License & Cert. - $70

Our wedding is at Dreams Tulum. We did have to give up photography (using resorts) but we have two guests in our party who went to school for photography (though are not professionals), so I feel confident that we'll get some good ones.  
Is your flights & All inclusive trip cost of $2,325 inclusive of the TA deposit, resort deposit and trip down payment?
