I don't see the need in having the dessert as part of the dinner.. None of our guests care for dessert and given that there will be wedding cake.. Has anyone chosen not to have dessert with their dinner? Can it be substituted for something else?

Pilar told us, 3 meals, TOTAL.  So we chose 2 entrees (beef and shrimp, scallops and Mahi mahi), and then a vegetarian option.  

We are sticking w dessert, but not increasing the cake #

I know! :-( The cost makes me sick to my stomach when I think about it..  Although it is cheaper than a wedding at home, it's still becoming more than I originally imagined this would be! My dad's shocked. When I mentioned a destination wedding, he envisioned it would be us and maybe a few family members, possibly about 10 people TOTAL... I kept telling him more people would come but he didn't believe me... I guess I can understand, out of 50 people coming, only 10 are from our side! The rest are me and my FI's friends and his side of the family!

Yes! It is so hard to say at this point what our final number will be. When the early booking came close to an end I was worried we weren't gonna be able to get many people to book. Now we are around 40 and I am content with that number..

 

That being said I know there are friends of ours thinking about booking last minute.. (which I am not too happy about) only because I would like to have a better oversight of who is coming and who is having what for dinner so I can arrange a seating chart and hammer out the details when the time commes. I don't want to leave everything until last minute because people are trying to get a deal... Anyone else feeling like this right now? I know that the dinner choices need to be in 45 days prior to departure and I am going to try and politely let those that are planning on booking last minute know..

i don't think swapping the meals is possible, unless you've opted for the higher priced pkg- ie. we're doing the divine pkg, so Pilar said we could choose anything from the divine menus, or we ould use anything in any lower priced pkg.  but as far as I know, it doesn't work the opposite way.

Ya that makes sense.. Neither one of us are big on pork... I might just ask if I can leave that option out and choose the 2 glutan free options instead? That might work..

Pilar told me only two entree options in total are available to choose from whether it be from the eternity menu or gluten free menu, and they would make an exemption for a 3rd vegetarian option if you have any that are.

Oh... I just read this now..

So perhaps we could do the scallops and mahi mahi, chicken from the glutan free and then a vegetarian option?
