Who has a good chile relleno and/or Mexican rice recipe?

Mom my taught me how to make the easiest rice with little effort. And since I grew up on it, it's such a comfort food for me.

 

Heat a tablespoon or so of oil and a little minced garlic in a skillet. Add rice and stir until golden brown. Slowly pour in water until the rice is almost covered, now add a small can of Hunts tomato sauce and a can of drained green chilis. Season with lots of chili powder and garlic salt. Bring to a boil, then reduce heat to a low cover until the liquid is absorbed. So easy, so good.

You can make fideo (thin Mexican noodles) the same way.

Yes, my mother makes them pretty much the same way ...

I am too lazy to burn and peel the chiles though (and my fingers hurt afterwards)... so I don't make them anymore :) But I can still eat the heck out of some good chiles rellenos!

This is the thread that doesn't stop giving...lol Thanks ladies!! I've got the roasting chiles down, we do them over open fire too in my family. Except we're Italian so we roast bell peppers & add garlic/seasoning and eat it on bread...so good.

 

I appreciate everyone's input. It's neat to see how recipes vary by family :o)
