Week 3 Recipe::

Some say this soup is the secret to their weight-loss success. It's a great midday snack or dinner appetizer.

 

Ingredients

 

 

 

2 clove(s) garlic clove(s), minced (medium)   

 

1 medium onion(s), diced   

 

2 medium carrot(s), diced   

 

1 medium sweet red pepper(s), diced   

 

1 stalk(s) celery, diced (medium)   

 

2 small zucchini, diced   

 

2 cup(s) green cabbage, shredded   

 

2 cup(s) Swiss chard, chopped   

 

2 cup(s) cauliflower, small florets   

 

2 cup(s) broccoli, small florets   

 

2 tsp thyme, fresh, fresh, chopped   

 

6 cup(s) vegetable broth   

 

2 Tbsp parsley, or chives, fresh, chopped   

 

1/2 tsp table salt, or to taste   

 

1/4 tsp black pepper, or to taste   

 

2 Tbsp fresh lemon juice, optional   

Instructions

  • Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer, partly covered, about 10 minutes.
  • Stir in parsley or chives; season to taste with salt, pepper and lemon juice. Yields about 1 cup per serving.

Notes

  • If you like thick soups, consider pureeing this recipe in the pot with an immersion blender.

    There are so many variations on this recipe. Add or leave out vegetables to suit your taste.

    Save time by using frozen vegetables instead of fresh ones (though the texture of the soup might change a bit). You can also buy small amounts of pre-cut vegetables from your supermarket's salad bar.

I did ok in Ottawa... it was a meeting for work and some coworkers insisted on taking me out for drinks because I'm getting married soon.  It's so tough to say no when people are just so excited for me.  Oh well, I'm doing my best and I'm pretty happy with how my dress looks.  Only 11 days until departure -- ahhh!!!

I was excited too, because I haven't seen anyone else with that date....and it a great date given the 4th month + 7 day = 2011 (or at least that's how fiancee said he is going to remember the date in the future with the whole 4+7=11 thing). :)  Planning is going well, but I can't believe how close it is getting.  Was on the stepper at the gym last night, and thinking we need to start cracking down on our welcome newsletters, ceremony script, music list, FI's clothes, and so on and so on.  How about you?  How are plans going?

I'm super excited!  But also going a little crazy... it's a busy time at work.  I still need to look over the ceremony script, work on the seating plan, and put the OOT bags together (or at least pack them).  Sometimes I start freaking out, but it will all be good in the end, no matter what.  I'm off to pick up my dress today, yay!! 

 

Good luck with your planning too... it will come before you know it.
