Wedding Menu~ What's Cookin' Good Lookin'?

    Just wanted to start a thread about what people are serving/have served at their weddings. I have an idea of what I want, but it'd be nice to hear some other ideas. Here's what we're thinking of offering our guests:

     

    Hors D'oeurves: Duck Carnitas, Lemon Shrimp Cones, and Quesadillas

    Appetizer: Crabcakes

    Soup: Tortilla Soup

    Entrees:

    1. Chinese Glazed Duck Breast with Sweet Potato Pur©e and Chile guajillo - Agave and Cilantro Sauce
    2. Grilled Lamb Chops with Braised Asparagus and Creamy Polenta in Rosemary Jus
    3. Roasted Salmon over Saut©ed Arugula with 10 Chili Oil and Mango Sauce
    4. Vegetarian Option: Puff Pastry with Poached Leek and Champion Duxelle in a Creamy Butter Sauce

    Dessert: Raspberry Vanilla Creme Brul©e.

        I haven't quite decided on the options, but this is what I'm thinking:

         

        Appetizers:

        Lobster Blaze w/Warm Tomato Salsa

        Crab Turnover w/Black Bean & Papaya Salsa

         

        Salad:

        St. Elizabeth Garden Salad

         

        Main Dish:

        Blackened Snapper

        Traditional Jamaican Pepper Steak

         

        Side Dish:

        Steam Callaloo & Cabbage

        Rockhouse Fried Potatoes

         

        Dessert:

        Plattered Fruits

        Ice Cream

        Wedding Cake

         

        Also:

        Jamaican style rice & peas

        Dinner Rolls

          QueenDiva- The sauce for the crab sounds amazing! I'm heading to Jamaica this Thursday, and can't wait to eat some callaloo and ackee and bammy and...everything I can get my hands on to ruin my exercise regimen! I'm debating whether soup is a great idea for a summer, beach wedding in Mexico...

            (Havent made a decision on this yet)

             

            Seafood Chowder

             

            Or

             

            Tropical Salad of Fresh Seasonal Fruits and Assorted Greens

            Served with Mango-Papaya Dressing

             

            Entrees

             

            Beef Tenderloin

            Laced with Tropical Fruits, Crispy Fried Onions

            Served with a Merlot Reduction Sauce

             

             

            Grilled Chicken Breast

            Topped with Curried Baby Shrimp Drizzled with a Light Jerk Sauce

            Accompanied by Fresh Market Vegetables and Potato du Jour

             

            Dessert

            Lovers Pineapple Baked Alaska Jamaican Style
