Warning about Palace Resorts!

I am having my wedding in mexico jan 2014 and we plan to stay at the moon and have the wedding at the sun.  To be honest, it has been an interesting and rocky road from the start.  I have been to the moon before about 7 yrs ago and LOVED LOVED LOVED it.  But things seem to move very slow there and it has me concerned.  We had originally booked the Cowie wedding package after being told by the wedding planner that it included everything and then there was conflicting information on the web site I came across and questioned what was all included.  Needless to say I was falsly informed by the wedding coordinator of what was included and I found out it really didn't include any reception decorations or much of anything except to decorate the beach to have a 10 min ceremony for 4200.00 it just wasn't worth it.  We paid 2100.00 down by check and we decided to just go with the complimentary wedding and asked for our money to be reimbursed.  Well the wedding wasn't so complimentary they still charge 250.00 and that is supposed to go towards additions (which I still feel that may be a sketchy deal too but I guess we will see)  Then I was initially told I could not get a refund and I can use those dollars towards wedding upgrades, which I didn't plan to upgrade much most certainly not 2100.00 worth of upgrades.  So I had to quote the contract and tell the coordinator I want my money back and she finally agreed to start processing it, but I would only get 1850.00 back because the 250.00 would be kept for the complimentary wedding which I was fine with.  So here I am after first initiating this process they told me it would take 60-90 days to get my money back.  I think that is completely ridiculous to have that turn around time to get your money back because it took them no time to cash my check.  Well I am going on day 63 still no reimburse and I contacted the coordinator to see if it had been sent and all she said is it takes 60-90 days.  I have looked online and there are lots of complaints turning up about people not getting reimbursed back money and it turns into a complete hassle .  So I am nervous beings I paid with check so no credit card recourse.  I also have heard the negativity in regards complimentary rooms recieved for booking and abundance of wedding party rooms and the resort dollars.  Has anybody had any recent similar experiences they can share??  Not trying to be negative about palace resorts, but haven't had the greatest experience this far and want to be sure I don't let to much time go by being patient and keep getting the run-around.

I have been doing lots of research on various wedding venues all around Mexico, my fiance wants a destination wedding and I am happy to have a wedding wherever so long as the vibe is right and guests are happy!  I have been seriously looking at Cabo Azul and was trying to find potential costs for them, but only found a page about their wedding costs from 2010.
