What's For Dinner?!

Thanks for that Aut! I guess I'm a day late from the Natl day wink.gif, but I'm actually making oven fried chicken for dinner tonight! It'll be my first time with a new recipe, so I will post later if it turns out good!

I cooked a delicious mexican chicken lasgana last night! SO YUMMY.

 

1 1/2 lb of chicken breasts

1 tablespoon olive oil

1 small onion (chopped)

1 can of black beans

1 can of diced tomatoes

1 can of green chiles (mild) (I couldnt find any so i got diced tomatoes with chiles)

2 tablespoons of taco seasoning (i used mild)

4 wheat tortillas

1 cup of reduced fat shredded three cheeses

 

Boil chicken for 30-45 minutes until done. Put onions in a skillet and saute them with olive oil. Put black beans, diced tomatoes, chiles and taco seasoning. Cook high until the sauce boils.

 

in a 8x8 pan, put one wheat tortilla on the bottom, put in the vegatables, then chicken, then cheese and repeat until you end up with the tortilla on the top and sprinkle cheese on the top. I added spinach to it. Cook at 325 for 15 minutes or until its done.

 

Put some lime on it. Oh so good!!

DANG! I wish I would have found this thread earlier today! Now I have no real time to read it before I leave work for the day! I am TOTALLY trying all of these though!!

What a great thread, FI and I do the same most nights. Tonight I made turkey meatloaf (a new endeavor, turned out well), smashed new potatoes with dill and garlic and sauteed spinach. FI was thrilled, he likes meatloaf a lot and I have never been a fan, but it was good.

Monday night I made the BEST alfredo sauce! It sounds too simple, but TRUST ME!

 

2 cups heavy cream

1/2 stick of butter

4 cups shredded Italian cheese

garlic salt and pepper

 

melt the butter over med low heat, then add cream and bring to a slow boil. Let simmer for 5 minutes and then whisk in cheese. Add garlic salt and pepper to taste and serve over noodles with garlic bread!

 

SO. GOOD.

There are so great recipes on here. I am really excited to try the skillet lasagna and the Mexican chicken lasagna!

 

Ok, so tonight I am making a pasta salad. I will have it as dinner, lunch or as a side for another dinner. It makes a lot so you will have leftovers for a while.

 

1 box Smart Taste rigatoni, cooked

2 98% Fat Free Traditional Ham Steaks (Hatfield), (cut into cubes)

1 block Crackerbarrel 2% Sharp White Cheese (cut into cubes)

2 pints Cherry tomatoes

2 Cucumbers, peeled and cut into cubes

1 16oz Fat Free Italian Dressing

 

Combine all ingredients and refrigerate at least an hour, better if overnight. You can add any veggies you want. I usually defrost some frozen spinach, drain the water out and add that in too with maybe some defrosted corn. A little parmesan cheese on top is good too.

 

For the ingredients listed above it makes thirteen 8 ounce servings. One 8 ounce serving is 232 calories, 6 grams of fat, 4 grams of fiber and 4 WW points.

here's the meatloaf recipe if anyone is interested. I combined 2 recipes to make it

 

turkey meatloaf

2 lb lean turkey

1/2 c skim milk

3/4 c quick cooking oatmeal

2 eggs beaten (could use egg beaters if you prefer)

1 onion finely diced (sauteed until translucent in small amt of olive oil)

1 green pepper finely diced (sautee with onions)

1/2c bbq sauce plus enough to spread over top while baking

1-2 cloves of garlic or powder

salt/pepper to taste

 

preheat oven to 350

combine oats and milk in large bowl to soften

combine everything else in bowl and stir until mixed. I added a slice of bread diced (or breadcrumbs) because it still looked too wet

 

place in a 9x13 pan about half way across and the full length (2-3 in tall). cover with remainder of bbq sauce and bake for about an hour or until the middle is 160 degrees with a meat thermometer.

 

FI LOVED it!!
