MMMMM I love polenta! I went through a phase where I only ate sautee polenta with homemade tomato sauce for weeks. It is delicious!

Yummy - I love fritattas - especially on Sundays!

 

Can you replace most of the pasta and bread that you would eat with more sauteed veggies? I know, I love veggies and that's rare, but you can have 1/3 of the pasta you would normally have and replace that with 2/3 veggies and you will fill up a lot more than normal.

 

Also, replace bad carbs (refined breads, and white rice) with whole wheat (really - not the stuff that just says whole wheat) bread, brown rice and rye berries (YUMMY).

 

Try a handful of almonds before you eat. They're high in protein and will get you feeling fuller before your emal versus trying to fill up with pastas and breads during your meal.

 

Finally - the best substitute is soup. You can make a chicken veggie soup (especially if you're not a huge fan) quickly and easily and you can pretty much eat that all day and stay trim.

I have done no carbs before, which is too restrictive for me, so about a month or so ago I tried just eliminating the major carbs like pasta, bread & potatoes. If I really wanted a piece of bread I would have it, but I tried not to make them a normal staple in my diet. So I ate a lot of fruits/veggies and protein and it actually worked very well. When I eat less carbs I'm so much less hungry so it helps me stay on track.

 

Of course I'm on vacation right now and all we've done is lay in the sun and eat, so I'm going to have to really get back to my diet when I get home so I can fit in my wedding dress!

That's fairly typical---- it's like when people quit smoking or give up sugar--- the body responds to the change, but usually after a week or so, symptoms go away and the body adjusts. Granted, not an easy thing to go thru for that week of adjustment...

I'm pretty much doing the low-carb thing 100% now, but mostly for medical reason. If I ingest gluten, I break out head to toe in blisters. Since gluten is in the majority of processed foods, I've had to give up breads, pasta, dairy, condiments, etc... On top of that, I had given up sugar also---- so for the most part, I'm limited to meat (and we switched to seafood, turkey, chicken, with the occasional beef), veggies and berries....

But boy, talk about some weight loss! Damn, in the first 6 weeks of the diet, I lost about 35 pounds! After awhile, my body got used to the dietary changes and now I feel better than I have in years! I don't have low energy, I went from sleeping 8-9 hours per night down to about 5-6, I'm more alert mentally, my memory has improved, and my digestive system feels better than it ever has in my life!

Not a dumb question. I didn't know what they were until a few years ago. There may be different ways to make them, but mine it like a big egg. I'll try find my recipe.
