My boyfriend does a low carb thing. He actually just cuts out the four "main" carbs. he doesn't eat Pasta, Bread, Potatos, or ummm... maybe it's three? I always forget the fourth! Anyway, he doesn't eat those so that he can eat all the other crap that he wants without gaining weight. It works for the little crapper too! Stupid boys! So lucky!

boys are so lucky!! My FH eats whatever he wants...

I'm on the weight watchers core plan which limits carbs to basiclly only one serving of whole grains, potatoes a day. One of our favorite fast meals for the summer is Chicken Cesar salad made with light Caesar dressing, precooked and sliced chicken, olives, grated parm cheese, and a Caesar kit. We add low fat croutons. I also love polenta (cornmeal). You can usually get a sausage shaped package in the vegetarian section. I slice it up and cook it in non fat cooking spray..have it with non fat low sugar pasta sauce or with salsa. And of course grilled foods like shish kebabs are made for the summer and low carb diets....yummy

Not a stupid question at all...frittata is basically a large omelette, but not flipped over...I use Egg Beaters/Whites instead.

But I sautee vegetables, like mushrooms, onions, green & yellow squash, etc and once they are ready, pour in eggs or egg beaters and cook until the bottom is set. Once it's set, I pop the entire skillet in the broiler until golden brown on top, and sprinkle with a little parm. YUM!

But there are a million ways to make a frittata, with italian turkey sausage, spinach and mushrooms, I've even seen one with pasta before. The best part is you can just use whatever you have in the frig, and it's usually pretty great!
