Welcome Back Shannon & Congratulations!!!! I'm so happy everything went great for you. It sounds wonderful. I'm happy to hear you were pleased with Cancun Studios. I'm leaving in 2 days and finishing my music...last minute. I can't wait to see your photos and chat more about your DW @ EDR.

We were there!! --- we had our meeting with the wedding coodinator, on Wed the 14th - at 9:30AM.... We got to the resort on the 13th- but yep, we were in the lobby that Wed meeting with Gloria! How funny!!!

We're back! Everything was beautiful. I'll write my review later. A few quick things though:

 

Both of my parents were pretty sick for 4-5 days. All we can figure out was they were the only ones to eat at Rincon Mexicana. A few other people had problems, but no one else longer than a day.

 

I didn't wear a veil, and I don't know how any of your girls did! It was sooo windy, esp at Gazebo 55.

 

Everything went very smoothly with the wedding and the coordinators (well, they were late picking me up, but they said it was because they were waiting on my guests. I think they were just running on "Mexican time").

Shannon, DH and I (and my parents) peeked in on your wedding. You were absolutely beautiful!! And did we see you having a dinner on the beach the next night? DH and I peeked in on Anna at her reception. I wish we all could have gotten together! Funny story, the entire time my dad could only remember Anna's name, so anytime he came across anyone with an English accent, he would ask if they knew Anna! Finally he met one of her friends. Very nice people!

Also, regarding the food:

Our dinner was at Las Fuentes. Everyone loved the pasta with shrimp, but the turkey dish didn't go over so well.

 

Isaac and I ate dinner at El Cocotal the last night. We were not impressed. Not even a little. In fact, Isaac could not cut through his pork chop, let alone eat it.

I need help deciding on our food choices...WC, Valeria & I have discussed it somewhat, but things still seem unclear.

 

I'm thinking of having our free welcome dinner at Fuentes the night before the wedding. That would be on a Saturday. Does anyone know what the menu is like there on Saturdays?

 

 

Also, I can't seem to decide on the 3 course meal that I'm thinking of having at Tucanes.

Anyone have any suggestions..??

Here are the main courses for Fuentes:

Please select two ( one to be served, Your Guest will have 2 options )

Grilled tuna wedges with Yucatan honey-scented black bean and corn relish, avocado sauce

Seared Mahi Mahi fillet with stir-fried vegetables and cashew nuts, sesame ginger soy emulsion

Penne Pasta with sautéed shrimp and parmesan cheese, ajillo cream sauce

Pasta Primavera, mixed vegetables sautéed with garlic, white wine and olive oil

Grilled beef arrachera “Wellington” with foie gras-stuffed mushrooms caps, Baja California Cabernet reduction

“Poc Chuc” lamb chops and sweet potato brulée, Xtabentun liquor gelatin

Achiote-marinated turkey breast roulade with Spanish-cured serrano ham & sundried tomatoes, grilled tomato cream

Grilled pork chop and pineapple with sautéed bitter greens, tamarind mole sauce

 

My daughter had the penne pasta (everyone loved) and the achiote-marinated turkey breast (dry and not so great).

Here is the dessert menu for Fuentes:

 

Caribbean ice-cream trio with amaranth bar

Fuentes “tres leches†with strawberries

Cookies & crème brùlée

“Nouvelle†Mexican chocolate, kalhua and coffee delight

Bananas “Foster†sautéed with an “Añejo†rum sauce

 

We had the tres leches and everyone seemed to like it. One thing about Fuentes, halfway through our dinner, they started doing food "demonstrations". It was shown on the overhead screens and announced my microphone. It was a bit loud and distracting.

We were able to sit at two tables for the 19 of us. One of the girls has celiac disease and required a special menu. The chef came out and talked to her personally to make sure she was accommodated and happy with her food.

Maybe the Pasta is the best, your right. I'll have to check with FI on the other options. By the way, who takes care of the final menus to be presented to guests at dinner? {Free Dinner & Private} I was thinking I had to work on these once everything is decided on. Is this so?

 

Also, were these "demonstrations" you say, for you or others around you?

My guestlist is now looking more like 30-35 people. How accomodating would you say Fuentes would be in our case? I would consider Cocotal, but I've heard their food wasn't all that great..What are your thoughts on this?
