Choosing Wedding Cake

I was not happy with what I have seen of the cake that the resort does so I did some research and talk to people about local bakeries. Someone told me about a local bakery. I have contacted them about cakes and prices. We will continue to talk the closer it gets to the date. I will go to see him the day we arrive so I can pick out flavors and colors. He told me that he wants me to be totally happy with the cake with no disappointments.smile123.gif

We knew from previous trips that the deserts are just different tasting in other countries. The chocolate is different, the vanilla is different, etc. so just be prepared for it to be good, but probably taste different than what you might expect. For example, the "cheese cake" that we had for the rehearsal was more like a super moist vanilla cake, not like cheesecake from the Cheesecake factory. We also decided to go with traditional wedding cake to Mexico (tres leches) because we knew they would do a good job on it. As for humidity, they didn't even bring our cake out until we were done with dinner. Check with your wedding coordinator with what they recommend. And have fun picking your cake :)

I absolutely love tres leches but that wasn't on our list of options. I'm sure I could get it if I asked for it specifically. Some resorts are pretty strict about doing everything through them rather than directly with vendors and ours seems to be like that. They did send us some pictures of previous cakes that are gorgeous!

My WC offered me several different options for cake flavors. I went with chocolate for the bottom tier (cannot mess around with a classic) and then tres leches for the second tier. I really wanted a tall cake but I was only having 35 guests and I didn't want to waste any extra food so I asked them to add a third layer just with styrofoam decorated with icing.

WC reports to me that tres leches is not an option due to melting issues sad.gif She says that although the cake will be done in fondant icing (thank goodness!) tres leches will melt in the heat. Tres leches is one of my favorite flavors...
