Hello,

Here in the area is difficult to find a chef pastry who works the fondant well.  Personally we love Zaida Marco's cakes but if you are not willing to pay her, then we suggest to ask your wc for a reliable company who works with fondant.   Here are some of our cakes that have been exposed to the wind for a couple of hours and they look fresh with no bubbles or melted!

Hello Hezmshaw,

I can imagine how you can feel.. but if you get the time I am sure you can get a good deal with the cake vendor... you can even ask to bring the basic cake to your hotel and ask the hotel's pastry chef to let you use their kitchen.. why not?  just try it... maybe it works!  I have heard that a pastry chef in Xcaret decorated her own cake in her hotel's room so you should try it!

I can concur that Zaida of Dolcet cakes makes delicious and amazing cakes. They are pricier than other cakes in the area (but not if you are like I was, comparing the cost to the same in NYC). There was also a significant charge for her to deliver from Cancun to where I was, Puerto Aventuras. It was completely worth it to me, though.

 

I had a pink champagne cake with strawberry buttercream. I ordered the cake for the look and the pink inside but was pleasantly surprised that it was also tasty.

I sent her a picture of my desired cake and what she sent me was exactly that. Exactly. She delivered the cake (and other desserts for my dessert table) without a hitch. She also beautifully decorated/presented the desserts for that table. I definitely recommend her!

Haha while I appreciate the suggestion, I am NOOOTTTT making my own cake. But I will contact this Zaida person :) Too much hassle to make my own, and stressful.. Plus I would no idea how to deal with the heat/climate etc, best for the pros down there.
