this is what i had:

welcome dinner i had a mexican/caribbean buffet with-

Salad bar
  • Crab salad
  • Avocado and shrimp salad
  • Tropical fruit salad
  • Green salad
  • Guacamole
  • Mexican salsa

Hot dish
  • Chicken tamales with mole sauce
  • Mix vegetables with garlic butter
  • Stuff potatoes with bacon and cheese
  • Mexican rice
Show cooking on the BBQ
  • Baby back ribs with rum BBQ sauce
  • Mexican flank steak on the grill

Desserts
  • Pineapple cake
  • Fried Mexican pastry
  • Buñuelos with caramel sauce
  • chocolate cake


the day of our wedding:


For our cocktail hour we had:
  • Spinach quiche
  • Guacamole and salsa with totopos
  • Tostadas of beef Salpicón
  • Mini tamales
  • Mini tacos dorados
  • Mini Quiche Loraine

For our reception:

1st course: Cream of broccoli with parmesan cheese
2nd course: Raviolis filed with spinach served trees cheese sauce
choice of:
Beef tenderloin filed with vegetable julienne served in red wine sauce
or
Sea bass fillet served over fresh Spinach and Hollandaise sauce

Dessert:
chocolate mousse and wedding cake

this is what i remembered but i think i am missing some appetizers and salads.

Tammy, were you happy with all of your food choices from Dreams? Anything you would/would not recommend?

i would have gotten a smaller wedding cake because the mousse dessert was so good nobdy at the cake that i paid extra for.

 

the caribbean/mexican buffet was really good..super yummy...i liked it better than sit down reception but maybe because i was so busy i did not eat so much at the reception. i did not eat 1 passed hors d'oevres because i was taking pics...so i dont remember much.

I wanted to let you girls know that Emeline got back to me about the color of the table linens that are available at the Hilton: "We have white, orange, black, gold, silver, red, chocolate, blue, yellow table clothes and bows for the chairs." She also sent me some pictures but they are on my work email and so I try to attach them in another post later.

 

On another note, I had asked her about going in Feb. for my final planning trip. We were hoping to go Feb 15-19th (this could count as Valentines too!) We have 2 nights free as part of our contract but I was hoping to go for 4 nights and have a break from work. She let me know that the resort only has 10 rooms left on the dates I was looking at and the best rate she could offer me would be $449 per night. YEAH - I don't think so!!!

 

I am going to have her look into some other dates. Since the wedding isn't until July I figure we should be OK as long as we go sometime before May. What do you think? We already have the resort taken care of and we are using Juan but I was leaving the rest of the details undecided until we went back down to meet with vendors.

So as many of you know I've been lookig into doing cupcakes instead of a wedding cake. Emeline has actually found a cakemaker who will do them for $4/each plus $35 for delivery and $100 for the stand rental. But the beauty is that since the cupcakes are going through her there is no additional $3/pp "cutting fee."

 

They offer all the same flavors except tres leches so we're going to do an assortment of Devil's Chocolate, Vanilla, Lemon and Mocha - yum!

 

Anyway noqw I have to figure out how many to order. Should I order one per person or two per person? I know not everyone will eat them but it would be awful for people not to get enough either!

That's great Kash! I would only do 1 per person. Some people might not even eat one, and if there are leftovers, those who want 2 can go get an extra.

Did you decide on a design?

I think I'm going to split the difference and get 100 (like 1.5 per person) plus it'll make for easy ordering and budgeting. I want them to look like that very first pic tammy sent me the "Small is beautiful" one.

 

They only offer silver and gold foil for the cups so I think I might buy them and ship them to Emeline... our colors are red, orange, pink and yellow. But the truth is I love the way they've been done in that picture - would it be weird for me to have brown and pink cake? I'll have to go back to the website tammy posted and see what other colors they have...
