Thank you s_katrese & MSG518 for the nice welcome and you helpful advise. :-) I too think it will be easier to take care of all the legal parts here and have the symbolic in Mexico, that way we would not have to worry. I was thinking to use the ceremony as our anniversary date as well, that helps to know that I am not the only one.

 

Thanks again for your insight and I am sure that I will have more questions soon. Hopefully I can return the favor to you ladies one day.

We actually got married on 5-22 of this year and are having our ceremony this coming 5-22 at Excellence so we could have the same date for our anniversary..

Katrese I think I am going to inform guests of the LaAmada option I have a few guests leary of the EPM price... Have you done the same or had anyone book there?

Yes I have a few guests who have inquired about La Amanda and I posted info about it on our wedding page...I am really trying to encourage everyone to stick with EPM so we can travel as a group. I just feel that if everyone goes to separate hotels and have a crappy time, they will only remember that "my wedding sucked" and lets face it the island doesn't seem big on partying it seems/sounds like its remote so I figure if we stick together everyone will have a much better time. I know that's weird, but I feel like I am responsible for my guests happiness and the overall funess of my wedding, if we split up I just feel like I'll have even more planning to do to keep us all together.

 

Hey ladies one question have you had guests ask you why you picked EPM? In my head I'm like because I wanted to. They all make it seem like attendance is mandatory and I feel like if you can't afford it so be it, but don't make me feel like I made a mistake by choosing a fairly nice although pricey hotel.

We are getting married at a courthouse here on June 11th (Neither of us really want to get our blood drawn in another country) and our symbolic ceremony is on June 15th. We will use June 15th as our anniversary date because we are thinking of it as the "real deal."

**Menu Question**

 

The FI and I are trying to figure out the menu for the wedding. We figured out the hors d' ouerves no problem, but the main entrees are so confusing! It seems most of them have a meat and fish. What have you girls decided on??

Jen your new signature photo is amazing... can't wait to read the blog. MSG I am looking for an answer to your question as well.

 

Also, I wanted to know if anyone has restaurant suggestions in Cancun, I have been checking trip advisor for suggestions but if you ladies have a suggestion please do tell. I read a few post back about Pat O Brien's, but the reviews aren't so good anymore on that particular restaurant.

Thanks for the compliments on the pictures. We used Cecilia Dumas and could not be more pleased with the wedding pictures.

 

As for the menu, I was able to choose two options, plus one vegetarian. I asked the WC (Nayeli) at the time for options that had only one meat and one fish. I have pick eaters so I couldn't mix meat and fish. We had grilled fillet of beef tenderloin glazed with roasted pumpkin seed sauce served with horseradish infused mashed potato and fresh seasonal vegetablesas one option and for the fish we had sautéed salmon fillet with an apricot glaze, basmati rice in a lemongrass bouquet. The vegetarians had mushroom risotto with pesto sauce.

 

The only request from the resort is that we gave them a count before hand. This was not a big deal. I just asked people to choose their menu choice on the RSVP card.
