We are having an Election party next week and i am planning on making low-fat turkey chili with homemade japelpeno cornbread.

 

i found this recipe on Food Network...

 

Turkey Chili

Serves: 5 (1-cup) servings

 

1 tablespoon olive oil

1 cup chopped sweet onions

1 tablespoon minced garlic

1/4 cup chopped yellow bell peppers

1 pound ground turkey

1 (28-ounce) can crushed organic tomatoes, undrained

1 (16-ounce) can red kidney beans, drained and rinsed

1 tablespoon chili powder

1 tablespoon sugar

2 cups low-sodium chicken stock

1/2 teaspoon garlic powder

1 teaspoon hot sauce (recommended: Tabasco)

11/2 teaspoons sea salt

1 teaspoon dried basil

1/2 teaspoon dried oregano

In a large skillet, saute onions, garlic and bell peppers in olive oil over medium heat until onions are translucent. Add ground turkey and cook until browned. Add remaining ingredients and stir well to combine. Reduce heat to low and simmer for 1 hour, stirring occasionally.

That recipe sounds really tasty! You mentioned cornbread so I thought I would share this recipe. It's one of our favorites:

 

Cracked Corn and Cheese Squares:

 

1 8.5 oz. package corn muffin mix, mixed to package directions

Softened butter to grease baking dish

1/3 pound Monterey jack or pepper jack cheese, cut into 1/4" cubes

1/2 C frozen corn kernels

2 scallions, thinly sliced

 

Preheat oven to 400 degrees. Grease an 8 inch square baking dish with butter. Stir cheese, corn, and scallions into corn muffin batter. Pour batter into baking dish and bake at 400 degrees until golden, approx 15 minutes.

 

We use pepper jack cheese to give it a kick. You could also add chilies or jalapenos. We usually serve it with chili or as a side dish with fajitas.

This is my mom's chili recipe, and it is so good and super easy to make. I use Jennie O 97% lean ground turkey instead of beef.

 

1 lb. package ground turkey

1 29 oz. can tomato sauce

2 cans Mexican chili beans & sauce

"pinch" chili powder (add more if you like it spicier)

 

Brown the turkey in a skillet, drain grease. Put the meat in a stock pot and pour in the rest of the ingredients. Cook uncovered over medium heat for 1 hour stirring occassionally so it doesn't stick to the bottom of the pot. It will thicken up as it cooks. I usually serve over macaroni, cavatappi or cavatelli noodles.
