Any vegetarians out there?

I have been inspired to try to reduce the amount of meat I eat and maybe call myself a vegetarian one day. Does anyone have any good meatless recipes they want to share. I have been searching the internet for a couple days and its overwhelming!

I've been vegetarian since I was 11. There's lots of yummy vegetarian dishes out there! If you like "international" foods, ost other cultures have a great selection of vegetarian dishes. I guess maybe I'll post some recipies I have saved in the other thread.

Thanks for all those links. I checked out Morgans thread. I had a feeling I should search first. I just cooked my first vegan meal, Lasagna with silken tofu instead of ricotta and other cheeses and eggplant. There's room for improvement, but it was pretty good.

Me! Wellll... k, actually I'm "mostly Vegan" ~ basically VERY little to no dairy/eggs/etc. and same with meat. I do allow myself fish though (couldn't give that up), and I feel my body needs a small chunk of meat every now and then. But overall, Martin and I have been living the "mostly Vegan" lifestyle for about 5 months now! It's amazing the changes in our bodies... we went off of it over our wedding/HM trips and gained back the 10 lbs we had lost!! :o

 

We live off of beans, or at least Martin does - I swear, he could literally live off of beans alone - crazy guy! LOL

 

Have you tried quinua (sp??) ~ soooo delish, lots of protein. Similar to rice. Love that with beans :)

Yes!!! I've been vegetarian since I was 11 thanks to my biology teacher and her obsession with telling us where meat comes from... now that I think of it, maybe she was a vegetarian/vegan too and that's why she kept telling us those horror stories.

 

I do love my cheese, so I'm not vegan, but I do use only cruelty free products, am against the use of (real) leather and fur, etc.

 

I love, love, LOVE vegetarian Mexican food especially. Yum!
