My wedding is not until May but maybe I can help you with some info I do know. As for reception locations, you can have it on the beach, in the wedding gazebo (if it's a small group), by the adult pool (but no kids allowed), or in the room above Portofino restaurant (it has a/c!).
You may also be able to have it at one of the a la carte restaurants such as Oceana Grill or El Patio; however, there is an additional $750 fee for this. El Patio is BEAUTIFUL, but there is no a/c and other brides have said it can get so hot in there. Oceana is a nice location by the adults only pool, but again there are no kids allowed over there. You can find pictures of the restaurants online.
We are going with the Ultimate wedding package. I think the decision should just come down to things that you are looking for. I love the gazebo decor that is included in the Ultimate package (the white organza/tulle draping) and we really wanted a mariachi band to play at our cocktail hour. So for us the extra money for the Ultimate package is worth it because we would have been spending extra on these things anyways
