Thanks, hoyt! I really appreciate it-I feel much better about printing up menus now. I love tres leches cake, but my fiance is a chocoholic, too, so we're doing one layer tres leches and one layer chocolate. I'm so happy that Ariadna's letting us do that!

Also, just an fyi for other brides, the Valentin wedding dinner menu has been updated-Ariadna sent me the new one a few weeks ago. It's nice because now you can choose one of each course instead of being locked into one entire menu:

      APPETIZER
SWEETENED CHICKEN SALAD WITH ORANGE AND NUTS VINAIGRETTE
      or
      CAESAR SALAD
      or
MIXED SALAD WITH LETTUCE, MUCHRROOMS AND ROASTED TOMATO VINAIGRETTE
      or
LETTUCE AND MIXED VEGETABLES SALAD WITH SMOKED SALMON IN
      DIJON MUSTARD SAUCE

      SOUPS
      LOBSTER BISQUET WITH ARMAGNAC
      or
ASPARAGUS CAPUCHINO CREAM WITH FRIED SERRANO HAM AND OLIVE
      or
      SHRIMP CAPELLINI AND VEGETABLES BRUNOISE

      MAIN COURSES
BEEF STEAK GARNESHED WITH SAUTEE POTATOES WITH GARLIG AND FRIED PORE IN RED WINE SAUCE
      or
PEPPER STEAK NEW YORK STYLE GARNESHED WITH VEGETABLES AND NAPOLEAON POTATOES WITH MUSHROOM GRAVY SAUCE
      or
MAHI MAHI FILET AND SHRIMPS WITH GREEN SAUCE AND RISOTTO IN WHITE WINE
      or
GROUPER FISH AND SHRIMP KEBAB GARNISHED WITH COUS COUS AND VEGETABLES IN PEPPER SAUCE
      or
CORDON BLUE WITH CHAMPAGNE SAUCE GARNISHED WITH MASHED POTATOES AND ROASTED PEPPERS
      or
SURF AND TURF (SHRIMPS WITH LOBSTER SAUCE AND BEEF STEAK WITH WILD MUSHROOMS SAUCE, GARNISHED WITH SLICED POTATOES AND SPINACH)

      DESSERTS

COCONUT MOUSSE AND CHEESE WITH NUTS SAUCE
      or
CHOCOLATE BISCUIT AND ORANGE WITH KALHUA SAUCE
      or
CINNAMON AND CHOCOLATE MOUSSE WITH EGG NOG
      or
      TIRAMISU
      or
NUTS CAKE WITH CHOCOLATE ICE CREAM

BREWED COFFEE, DECAFFEINATED COFFEE & TEA

Anyone know if eith Ariadna or Lupita left the VIM? My travel agent says she has been working with another coordinator. I just don't want to get stuck with a crummy one.

Any info would be much appreciated!

I know for sure that Ariadna is still there because I'm working with her right now. I don't know about Lupita, but you may want to count yourself lucky that you're not working with her-people haven't had good things to say about her on this thread.

Lupita was great once we got to the resort! But before we go there, not so great at all, lol. Lupita is a really sweet person, but she doesn't like to budge on a lot until you get there. She's not so bad in person.

For some reason my TA isn't telling me the name of the coordinator she is talking to. I think I'll see if I can stipulate I want to work with Ariadna.

I'm so dang nervous about committing, y'all!

No you'll be fine! I was so nervous about the whole dw thing and the lack of communication, but once we got down there, I felt so silly for thinking that way. Honestly, except for the little personal touches, everything can be taken care of once you get down there. And the wc make you feel very comfortable and like you're they're queen once you get there.
