Zucchini Overload!

Okay ladies... my garden is in full swing and our 3 zucchini plants have started producing insane amounts of zucchini! I seriously don't know what to do with all of it! I made zucchini bread, zucchini slaw and caponata (substituting zucchini for the eggplant). Anyone have some killer recipes to use this stuff up? Things that freeze or can be easily jarred (never done it but willing to try) would be especially helpful!

we regularly grill zucchini - cut about 1/2 to 3/4 of an inch thick, put in a ziploc bag, put about 1-2 tbsp of EVOO in the bag to coat the zucchini, then sprinkle salt & pepper in the bag and then close the bag. rub the bag around to make sure everything gets coated, and then dump them onto a plate and place on the grill just long enough to get slight grill marks on each side. its delicious and healthy and one of my FI's favorites.

Mmmm one of my favorites! My parents grew zucchini and I know what you mean about the over production, it does get crazy. Have you given any away yet? That always helps.

 

I love grilled zucchini and zucchini boats as they call them, yum! If you have the blossoms there are yummy things you can do with them too.

My grandma makes a zucchini soup ... its a cream based soup that is really good.

 

I don't have her recipe... but this one looks kind of close:

I know that soup freezes well because I do it all the time. I laddle about 2 cups in to a quart sized ziploc and then squeeze the air out and stack the bags one on top of another... it freezes them flat so they stack easy in a sometimes crowded freezer. :)
