Attempting to make potato salad...

Today is Kevin's 30th birthday, and we're having family over for dinner tonight. My friend made the best red-skin potato salad Saturday night, so I'm trying to make that. Wish me luck! I have no idea how long I should be boiling these potatoes, how I should cut them, etc.! I really hope it turns out, but I'm a little nervous! Can you tell I don't cook often, and when I do, it's easy stuff!

cook them until you can easily pierce them with a fork - not mushy, but soft. Think about the texture of the potato salad you had on Saturday - the fork should go into your potatoes with the same ease as it did with those.

 

For cutting, I'd either slice them in large slices (1/4 inch or so), or cut them into 8ths - quarter the potatoes and then cut each chunk in half once more.

Of for sure- I don't cook and I can make potato salad. You just cut the stuff up and mash it all up. LOL

 

I add a little bit of pickle juice to mine though- not sure if that's a normal thing. My whole family does it. I also like lots of mustard. Yum- I should make some tonight.

amy - add some bacon and shredded cheddar cheese and chopped green onions - it makes a great "loaded baked potato" salad. we cut the mayo in ours with sour cream so it's a little healthier too.
