Okay Ladies I am having issues trying to figure out what to have as a dessert for our AHR. Its going to be a informal mexican fiesta at a park here. We arent doing any of the typical wedding stuff, ie dancing, wearing my dress, etc. We are having a friend cater it with mexican food but she doesnt bake or anything so we are trying to figure out what to do for dessert....any ideas? I was thinking about trying to do tres leche cupcakes or something but I am stuck. Please help!!

I love tres leches cake!
Or maybe some pan de polvo. I am not sure if you can find someone to make that where you live?
Or maybe Mexican bread pudding? I don't like it, but I know a lot of people that do.

We had tartlets with tropical fruit both at our AHR and wedding reception in Mexico. Tasty!

This may be too far out there, but how about an Ice Cream Man - Back where I grew up in Salinas, these guys had ice-cream pushcarts. There were all kinds of frozen treats in those white boxes on wheels.
You could just hire the guy for a night, and pay for everything everybody consumes.

I really like the cupcakes that Tammi (foxytv) had for ahr. they had chocolate starfish on the top and the cupcakes were on a cake stand. it looked really cute. and they are easy to eat with your hands, no fork required.

The reciepe for the tres leche cupcakes sound fantastic too.....
Ice cream man...now there's an idea. It is going to be hot out and I think I would go broke feeding 125 people ice cream that night...but I will have to keep that in mind for something else soon!!

Individual Mini Cheesecake Cups
Chocolate fountain with fruits/pound cake etc.
