Quick & easy St. Patty's day snack ideas

If you like brie cheese...

 

Buy the pillsbury crescent rolls. wrap the brie in the crescent roll. before you cover the top, lather the top of the brie with a jam or preserve of your choice, pecans, and maple syrup. Wrap the crescent roll over the top and then put some more maple syrup and pecans on teh top. Bake at 375 for 20 minutes. Serve with break or crackers. It is AMAZING! A real crowd pleaser:)

Oh Jac, you HAVE to make irish potatoes! They are so easy and DELISH! Let me see if I can find a quick recipe. I think it's mostly cream cheese and granualte sugar, covered in cinnamin. I used to make them all the time!

IRISH POTATO CANDY

 

1/4 c. (1/2 stick) butter, softened

4 oz. cream cheese, softened

1 tsp. vanilla extract

1 box (16 oz.) confectioners' sugar

1 bag (7 oz.) (about 2 1/2 c.) flaked coconut

Ground cinnamon

 

Cream together the butter and cream cheese in a large bowl. Beat in the vanilla and confectioners' sugar, then mix in the coconut. Roll mixture between hands to form walnut-sized balls. Roll balls in cinnamon and refrigerate until firm. Yields 30-36 balls. Use good quality, regular cream cheese.

I like to make this dip/salsa type thing that I got from a co-worker. It's called Texas Caviar. SO easy and SOOOOo yummy!! Whenever she brings it to any work parties and stuff we all munch on it all day long! It's addictive.

 

 

1 can corn

 

1can black eye peas

 

1 can black beans

 

1/3 cup chopped jalapenos - you can use pickled/canned for this or even fresh...but be warned, the fresh ones give off a lot more heat. so maybe a little of both if you want it more spicy.

 

1/3 cup cilantro - chopped

 

1 red onion about ½ of it - chopped

 

1 bottle Italian dressing

 

 

 

Drain corn and black eye peas, rinse and drain black beans.. put all of it in a bowl and then stir in 8-10 ounces of Italian dressing and then chill…The end…………sooooooooooooo easy!!!

 

 

I serve it with the tostitos scoop chips...since it's so chunky it's a lot easier to get it to stay on the chip that way.

also you can do st pattys related things instead of random munchies...

like cut up irish soda bread into small pieces with a cream cheese type dip... make a corned beef (so easy) and shred it, then buy cocktail rye and mustard for little corned beef sandwiches.... green river soda, dont know if they have that where you live, but its a must here in chicago for st pats.
