That would be great...I cannot believe that I didnt pay more attention when I did my site visit. Of course this is probably because a beach renovation wasnt mentioned!

I'm having the same issue! I emailed Cecilia about a week ago and haven't heard back which is weird since she has been quick lately since my wedding is in a few weeks!

 

I finally gave up waiting for email and called her.....it took about 10 tries but i finally got her!! She mentioned to me that the new beach is like we already know, very large so they cannot set anything up too close to the water. But i really need a visual so i cant wait for these upcoming reviews!!!

hey ladies! i selected the mahi mahi for my dinner reception and just realized that the description says it's stuffed. anyone know what it's stuffed withhuh.gif is the salmon fillet (my 2nd choice) better?

 

Mahi-Mahi Fillet

Stuffed Fish wrapped with Potato and accompanied with Risotto, white wine scent and Juliana Vegetables.

 

OR

 

Salmon Fillet

Served with corn tortilla and vegetables Risotto, duo of avocado-coriander and mango-orange sauces

Hi ladies! So, I leave in about a week and a half (yikes!) and I haven't heard from Cecilia, can you guys think of anything that I MUST do prior to arriving? I havent set the dinner menu, but I figure I can do that at our meeting. I've made spa reservations...but I feel like I haven't done much. Do most people do the majority once they get down there?

 

Thanks for the help! I'm getting excited!!! I'll be sure to bring back lots of pics :)

Wooo Hoooo!!! a week and a half - i bet you cant sleep at night!!!

My wedding isnt until August, but from reading on this board it seems that most leave just about everything until they get there! I think as long has you have everything in order ceremony wise (your music and script if you are writing your own) then you should be fine!

Im leaving pretty much anything that requires a "choice" for when we get there. Im not picking a menu until we can taste it, and im not picking flowers until i can see sample pictures!

Cant wait to see your pics and read your review!!

Needing some urgent help!!!

 

How does the menu work. Do my guests get to choose between options 1, 2 or 3huh.gif I'm so confused...Claudia said i can mix & match from the silver & gold menu so i sent out emails to the confirmed guests with the silver & gold options & told them to pick what they want...is this righthuh.gif Do i pick one option & thats what everyone getshuh.gif Aaaahhh....i've never been more confused by food!!!!

Actually, You have to pick out what the set menu will be and that is what everyone will get.

What she means by mixing the silver & gold menu is, you can use a Appetizer from the silver menu and the entree from the gold or visa versa & etc...

 

They will work with you for Kids and Vegetarian's. I think another girl even got her to give her guests a choice of two options and they got to pick at dinner or something like that. :)

and don't forget that depending on the number of guests you have you'll do either sit down or buffet style. i'm pretty sure that up to 40 guests you can have a sit down and after 40 it's buffet style.

 

don't worry if your guests reply to your email and everyone wants something different....it's your wedding and you pick whatever the menu will be. kinda sucks that you gave them the "option", but i'm sure that the day of, no one will even think about it. plus from all the reviews, the food during the reception is better than what they normally do at the restaurants!

Thanks. All of this is just overwhelming lol Luckily i had only sent the menus to a couple of people so i backtracked & corrected myself. What i've done now is give them the option of picking the chicken suprema option or the dreams duo option (steak & fish) Claudia said that should be fine since there are some people who don't like fish and we are only having about 30 people...Is that what you guys are doing? If they only let you pick one how could you possibly decide when so many people have such different tastes.
